Cuikou Roasted Chicken is characterized by its color, aroma, taste and shape. It adopts the traditional firing technology, and the raw materials are all healthy and disease-free free-range grass chickens. The chicken is brined in aged chicken broth and supplemented with more than 20 kinds of selected Chinese herbs such as Angelica dahurica, cloves, cinnamon, etc., and carefully brined for three hours over a mild fire. Afterwards, the chicken is placed on top of a bamboo stove and smoked with sugar to create a delicious flavor. Cooked chicken is shaped like a Yuanbao, beautiful and attractive; the color is red and yellow, attractive; salty and light, the meat is delicate, fresh and mellow, whether it is served cold or hot, all the aftertaste is full of aroma, leaving a long lasting memory.
Cuikou roast chicken, a delicacy originated in the late Qing Dynasty, is still glittering after a century of vicissitudes. Its deliciousness has long surpassed the enjoyment of taste buds and become a cultural card of Cuikou town and even the surrounding areas. Its unique aroma seems to be able to penetrate the dust of time and bring people back to the bustling bazaar.
